One more thing. You mentioned a blast cabinet. I have a glass beader. Great tool, but, placement is a problem because no matter what you do, you get glass dust all over. And it is invisible for the most part, very slippery and you need to keep it away from clean machined parts. Because, it will continue as an abrasive even when youcan barely feel it. Also whatever you use for exhausting will be very noisy (think loud shop vac, on all the time you are blasting). Near a parts washing room might be good.

Size. The bigger, the better.
Orientation. Long ways, for sure. May I suggest a 10x10 door on the front, (centered) and a man door, on the right side.

Service:
50amp electric sounds adequate.
3/4in water line from house
1in natural gas line from house
6in sanitary tied to existing septic.
Storm drain???
I recommend the garage have it's own water heater.

Urinal? Beer in = Beer out.
